    Looking for cheesy corn casserole recipe

    I am going to my dd for Thanksgiving. I always make corn casserole with 2 cans of regular corn (not creamed corn), 2 eggs, onions, celery and shredded cheddar, topped with FF onions. I have made this at least 50 times but never in a crock pot, which I need to do this year bc her oven will be full. I looked for recipe online but they all call for using cream cheese which I don't want. My question is, should I just bake this ahead of time in my oven then put in crock pot to keep warm? I am afraid if I cook it entirely in the crock pot it might taste a little rubbery. Thanks!

    I have no suggestions, a cook I am not. But your corn casserole sounds great!!!

      I would cook as usual and just use the crock pot to keep it warm. I haven't done this but think it would work fine.

          I wouldn't use a crockpot. I made some chili in one and used a can of corn and it lost all it's sweet flavor. Speaking of flavor. I think Coscto had the best canned corn. So crunchy and sweet. I did some research and the brand they use under their label is Del-Monte. Shh, don't tell anyone

            Perhaps you could use an ovenproof dish that would fit down into the crock pot and just have the crockpot be a warmer.

              Here's a new one to try.

              Swiss Cheese Corn Casserole
              This EASY to make corn casserole is a must make for any holiday. Loaded with cheese, buttery crackers and corn this will quickly become a family favorite! 


              I would use gruyere cheese. A little more expensive, but oh so yummy! There is a recipe enlarger there too.

                Thanks Lorie this is identical to the recipe I use except I use 2 cans of regular corn, not creamed corn. The question is do I DARE change from cheddar to gruyere? You know how family always wants everything to be exactly the same all the time.

                  Why not make a little mix of both cheeses. When I make my Mac and cheese I use cheddar, gruyere, and fontina, it is delish!

                    This quiche combines sweet corn and cheddar cheese for a delicious flavor.

                      Cathy -- I live in Wisconsin the Dairy State! Cheese is everywhere but can you believe I never even heard of fontina cheese!
