    Default Copycat Zuppa Tuscana Soup

    For those who enjoy this soup at Olive Garden, he has nailed it!! Made this for dinner tonight. ENJOY!

    I just knew it had to be (just sounded fantastic!), but am glad you let us know. I’ve purchased everything but forgot the spinach......mmmmmm......next time. At least after it’s safe to go out and do so.....it sure would be great today!

    I looked at a few Zuppa Toscana recipes and some of them suggested kale as the green that Olive Garden uses. I found a pre-packaged mix of baby spinach and baby kale so that's what I used. Normally I stick to the original recipe the first time I make it but this change didn't deviate much from the original and I don't think it changed the taste much. I'm looking forward to leftovers today because soup is always better the next day. The other thing I might do next time is to cut a few of the potatoes into tiny pieces so they disintegrate into the broth, just to thicken it up a bit.
    Yesterday was a snowy day here so this soup was perfect. Served it with crusty bread for mopping up all that deliciousness.

    We made this soup last night!!! Delicious! We used a combination of sweet Italian sausage and breakfast sausage. Yummy!

    I made this soup the other day. Got a new Instant Pot for Christmas - of course had to try it. I had everything except for the spinach and shallots - so I used onions and kale. Really good - only thing I would do different is to really drain off the fat from the sausage. I froze in 2 cup containers for another day.
