    Default Gypsy soup

    The original recipe comes from Molly Katzens book “Moosewood Cookbook” but we’ve modified it a bit to make it easier and we think, yummier.

    1 can chopped tomatoes
    2 tbs. oil
    2 c chopped onion
    2 tsp. Chopped/crushed garlic
    Stalk or two of celery
    2 cups peeled, diced sweet potato
    Tsp each of salt, basil, turmeric
    2 tsp paprika (we use smoked)
    Dash of cinnamon and cayenne
    Bay leaf or two
    3 cups water
    1 medium bell pepper, diced
    Can of chickpeas , drained

    Heat the oil in a kettle, dutchoven, soup pot, whatever you use to make soup. Add onion, garlic, celery, sweet potato and saute’ Over medium heat about 5 minutes. Add salt and saute’ About 5 more min. Add seasonings cover and simmer about 15 min.
    Add rest of the ingredients and simmer about 10 more min. Or until veggies are as tender as you like them. Taste to adjust seasonings, remove the bay leaves and serve.

    We like to make up a big pot and freeze up servings to be microwaved for lunches. Yumm!

    That looks yummy. I was just getting ready to look up the recipe (after reading your earlier post). I just finished making a pot of sweet potato andouille soup https://www.thedailymeal.com/recipes...le-soup-recipe , so I'll have to save your recipe for next time.

    You don't see too many soup recipes with sweet potatoes instead of white potatoes in them. Or at least I don't. This looks delicious and I am looking forward to trying it soon. Thanks for sharing Pam.
