Peach Slaw
Looking for a new salad for a BBQ or pot luck? This will get everyone's attention, makes about 9 servings depending.
1 serving, 192 cal, 11.7 g fat, 22.9 carb, 158 mg sodium and 18.6g sugars
If you are conserened about nut allegory, leave nuts out or put in a small container so people can add if wanted. Make sure the nuts don't touch cutting board, knife and are stored in air tight container.
Peach Slaw
1/2 cup pecan halves toasted
5 fresh peaches
4 cups very thinly sliced savoy or napa cabbage
1 red bell pepper, thinly sliced
1/4 cut chopped green onion
14 cup chopped fresh mint leaves
1 tablespoon celery seeds
1/4 cup fresh lemon juice
1/4 cut honey
1/4 cup veg oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Toast pecans and let aside
Slice 4 peaches, with skiing and toss together with cabbage, red pepper pecans, mint, green onion and celery seeds in
a large bowl. Chill, covered 45 mins to 1 hr.
peel and coarsely chop remaning peach and puree with lemon juice, honey, oil, salt and black pepper in blender. Add to slaw mixture and toss to coat. Chill, covered up to 1 hr. Toss before serving. Sprinkle with additional black pepper if desired.

What a lovely recipe. I'm happy there is no bacon in it since I don't eat meat. I know people say just leave it out, but I like to see these without it in the first place. Thanks!

Thanks. This sounds very good. But to clarify, I think there may have been an auto correct: "Slice 4 peaches, with skiing and toss together with cabbage....", should skiing be skins? in other words, the peaches are not peeled in this recipe?

Not to mention 14 cup of mint.
Skins on the first 4 peaches and 1/4 cup of mint.

Funny.....my mind read 1/4 cup mint and skins.......weird how the brain can work. Sounds delicious!

I'm sorry, darn auto correct and I forgot to proof read before I hit send.
You do not peel the 4 peaches and its 1/4 cup of mint.

thanks for the clarification......at least we all know about that darn auto-correct. I wish I could turn it off on my phone so my mistakes would be MINE. Not to mention that sometimes it just doesn't believe what you re-type and insists you are wrong.....arrrggg!!!
Peaches are just coming in here and I have a huge bed of mint growing like crazy. This will be on my menu this week.

Mine also noticed that you mentioned 1/4 cup chopped mint leaves here.. My suggestion for you next time you should try use ghee instead of veg oil.. It's turned out the recipe too delicious with yummy taste.

Yes Carlie, that is what I did. So they are "bite size" . If your peaches are bigger, you may want to cut the wedges in half. I also use 2 peaches in the dressing. Makes it a bit more "peachier".
This is a very good recipe and I am making again for next weekend, although I am currently without fresh mint but don't think it will alter taste too much.
