I make this simple fruit salad year round. It is always appreciated and so easy. And Tasty.

Use equal amounts of the following:

    Red seedless grapes
    Drained canned mandarin oranges
Fresh pineapple cut in bite size pieces
Sliced bananas that have been treated with Fruit Fresh

Mix together gently, and chill. This needs to be eaten fairly soon, (No overnight chilling) as the banana will soften and brown, even with the fruit fresh.

At our house, salad is part of summer. Grilled romaine lettuce with caesar dressing sprinkled with parmagean cheese....simply yummy! We also do a traditional salad of romaine lettuce, cherry tomatoes, a wedge of cheddar cheese, a tad of purple onion, perhaps a hard boiled egg, served with cut up lunch meat (sometimes chicken nuggets), with your favorite salad dressing. Mmmm tasty!
Blogging ahead.....research in quilting and sewing with a dab of cooking/recipes too.

I would love to try the frozen apple salad. I never hear of it before, but if it has apples, it has to be quite tasty.

If you want recipes, I will need to get them together, just let me know.

    Chestnut, bacon & parsnip soup

    Ingredients:
4 chopped rashers smoked streaky bacon. The drizzles of olive or rapeseed oil. 1 chopped onion. 1 crushed garlic clove. 6 peeled and chopped parsnips. 1 chicken stock cube. 400ml milk. leaves from 4 thyme sprigs. 200g cooked, chopped chestnuts

    Process
Fry the rashers of bacon in the oil until crisp. Scoop out half the bacon and set aside until later. Add the onion and garlic to the pan, stirring until tender, then add the parsnips. Cook for another 5 mins, then crumble in the chicken stock cube. Add the milk, 600ml water, the thyme and chestnuts. Cover and simmer for 30 mins until the parsnip is tender. Blitz with a hand blender, then season to taste. Ladle into bowls and top with the reserved bacon.

    Tabbouleh:
    2 large bunches parsley
    1 bunch green onions
1/2 bunch fresh mint (you can also use dried)
    4 large tomatoes
~3/4 cup cracked wheat, fine (bulgur)
olive oil, lemon juice, salt and pepper to taste

Soak the wheat for a few minutes to soften. Squeeze dry by pressing between palms. (Don't soak it too long or the salad will be soggy). Chop the parsley, onions, mint and tomatoes very fine. (I usually make the tomatoes a little larger or they will turn to mush). Add the remainder of the ingredients. Mix well and chill. Serves 6.

Cucumber Yogurt Salad (this is so cool and fresh on a hot day):
    2 cucumbers
    2 cups plain yogurt
    1 small clove garlic, crushed
    1/2-1 tsp salt
1-2 tbsp crushed dried mint or 1/4 cup fresh chopped mint

Peel cucumbers and slice. If they're large, quarter them lengthwise before slicing.
Add the garlic, mint and salt to yogurt, fold in cucumbers. Chill.

I also like to make bean salad. You can mix black, red/white kidney, chick peas, etc., some chopped vidalia onion, chopped celery and very important: fresh parsley. It makes this salad come alive. I use olive oil and lemon for dressing, some S&P and chill. It's so refreshing and will last for days in the fridge.

Strain and awesome by operating cool water over the rice in a colander set in the drain. Merge prepared and cooled off rice with the cucumbers, red onion, tomato vegetables, and olives in a large dish. Add the French dressing up over the healthy salad and mix to blend. Cover and chill for at least two hours before providing.

We eat a lot of lettuce salads but need some
variety. With hot weather here itís nice to
Have a nice salad instead of a heavy hot meal.
I have a 7 layer recipe and a Apple salad recipe.
Not sure about a pasta salad? We donít usually eat
carbs, unless you have a really great recipe you love.
