    Default Guilt free/flourless/no calorie chocolate cake

    Yeah right! But its my birthday cake!
    This is from a cookbook I published in 1993 and is decadent to no end. It contains no flour and the bread crumbs could be gluten free so it could be gluten free if you make it that way. Calories...not so much!!

    MOCHA PECAN TORTE
    This is one of my personal favorite desserts, but it is time-consuming and calorie coutin is out when I make it. I try to make it 2 or thee times a year and only when I have lots of company so that there won't be any leftovers to tempt me.

    8 eggs, separated
    2/3 c. powdered sugar
    1 tsp baking powder
    1/3 c. cocoa
    1/3 c. soft bread crumbs
    1 tsp. vanilla extract
    2 c. ground pecans
    mocha buttercream frosting

    Line the bottoms of 4 8 inch round pans with waxed paper. Grease and flour waxed [paper, set aside. Combine egg yolks, sugar, and baking powder. Beat at high speed 2 -3 min., or until mixture is thick and lemon colored. Combine cocoa and bread crumbs and stir into the yolk mixture. Stir in vanilla. Fold in ground pecans. Beat egg whites in a large bowl until stiff peaks form. gently fold in 1/4 of the egg whites into the yolk mixture. Fold remaining egg whites into the yolk mixture. Pour batter evenly into the pans, spreading top smooth. Bake at 350 degrees F. for 15 min. or until layers spring back when lightly touched. Do not overbake. Cool in pans 5 minutes . Invert layers onto wire racks and peel off waxed paper. Let cool completely . Frost with Mocha Buttercream frosting.

    Mocha Buttercream icing

    2 1/2 tsp instant coffee powder
    2 tbsp. water
    3/4 c. plus 2 tablespoons butter, softened
    1 tbs plus 2 tsp cocoa
    7 c. powdered sugar
    1/3 c. half and half
    1 tsp vanilla extract

    dissolve instant coffee powder in water, set aside. Cream butter in a large mixing bowl, add coffee mixture and cocoa. gradually add sugar alternately with half and half, beating until mixture is light and fluffy. Beat in vanilla. Makes 4 1/2 cups.

    Terry, this sounds DELICIOUS!! Would you be willing to come and make it for me? LOL...I think I will try this, and if I do will post. Thanks.

    Different strokes for different folks. I do love chocolate...and have a granddaughter in law who is on gluten free diet. I would be willing to make it for her and then enjoy it for myself. Win Win!!!

    I love chocolate, and like to stir a spoonfull of cocoa into my morning coffee sometimes. Just can't handle it in cake.
