    Default What I pickled, cooked This weekend

    I was like an energizer bunny this weekend. I bought a bushel of red peppers. I cut some up to freeze, and roasted most of the bushel to make peppers with garlic and oregano in olive oil. I also made a tapenade, which I used to make a tortilla pizza. Click image for larger version.

    We are having glorious weather this week. The most heat and that we have had all summer, as this was an unprecedented year of rain.

    Enjoy life and do what makes you happy. Everything else will follow.

    Every day I try to do one thing that challenges my comfort zone.

    Oh my gosh it has been years since I had pickled beets, I almost forgot how much I like them. Your photos look like they belong in a magazine, everything looks soooo good!
