    What I pickled, cooked This weekend

    I was like an energizer bunny this weekend. I bought a bushel of red peppers. I cut some up to freeze, and roasted most of the bushel to make peppers with garlic and oregano in olive oil. I also made a tapenade, which I used to make a tortilla pizza. image.jpg pizza topped with artichoke, olives, basil and cheese.
    I also made a strawberry, blueberry and dried cranberry pie. image.jpg
    A huge pot of chicken and dumplings, which I will send half to my daughter who recently had a fever from a block milk duct. image.jpgimage.jpg also a stockpot of meat spaghetti sauce to freeze, and use on days I want to quilt, but not starve.

    We are having glorious weather this week. The most heat and that we have had all summer, as this was an unprecedented year of rain.
    Enjoy life and do what makes you happy. Everything else will follow.

            Oh my gosh it has been years since I had pickled beets, I almost forgot how much I like them. Your photos look like they belong in a magazine, everything looks soooo good!
