    Default Breakfast Recipes - National Breakfast Month

    Today I discovered that September is National Breakfast Month. Breakfast is my favorite meal of the day. Maybe some of you would like to share your favorite breakfast recipes here to celebrate National Breakfast Month? It would be a nice place for us to to check for new breakfast ideas.

    One of my favorite breakfasts to have is biscuits and gravy. This also tastes good using breakfast potatoes in place of biscuits. I was at a restaurant and they were out of biscuits and offered potatoes in it's place. It is very good both ways. I'm cutting and pasting a recipe here because I never measure. This recipe calls for salt only but I add black pepper too. I've made it with Jimmy Dean breakfast sausage (all kinds of different flavored ones and they are all good.) Have also made it with mild Italian sausage and it was good that way too.

    I'm looking forward to cooler temperatures so I can make this again soon.

    Home made granola, made with dried cranberries and walnuts. A sliced banana added at the last minute if I have one. Fresh coffee, black.

    I am passing fond of fresh tomato omelets in the summer. Just make a regular plain omelet, and just before the fold and serve, fill it with fresh chopped tomato and a hefty dollop of sour cream. When in the mood, I add fresh chopped basil as a garnish.

    I'm still a bagel/cream cheese and lox girl. But I switched out to English muffins, not so much bread. Add some tomato and onion or capers. It's more of a late morning meal, I don't usually eat breakfast.

    OK I give up. Capers. What is that?? What does it taste like?

    It has got to be homemade cheese and grits with scrambled eggs and side of sausage and two cups of fresh coffee! Yummmm I will be good until dinner time. I getting hungry now!! LOL

    My daughter learned to enjoy baked beans with her breakfast while in England. The baked beans don't have the molasses sweetening that we are used to in the US. I found this recipe and make up a batch, freezing it into small portions:

    I also like to take an egg breakfast casserole recipe and divide it into single serving disposable containers. Freeze them, and then take one out as needed and bake in the oven.

    We regularly do breakfast for dinner in my house. But my all time favorite breakfast is poached eggs with bacon and a cup of tea. I do them for myself as no one else like them in my house.

    Here is my husbands' and his friend's favorite breakfast meal. When they play cards, he spends the night (lives out of town) and I get this one fixed up for them for early morning breakfast.
    Brunch Casserole
    8 slices of bread, whole or cubed ( I always cube mine and sometimes I use leftover hard rolls, hamburger buns)
    6 eggs
    2 cups of milk
    2 cups grated or shredded cheddar cheese
    2 pounds of cooked and crumbled sausage
    1 can cream of mushroom soup undiluted
    Grease or use Pam spray to a 9x13 inch cake pan. Add the bread to the pan. Mix egg, milk and pour over the bread. I cover the pan with foil and refrigerate overnight. Also I cook the sausage the night before so it is ready to go into the casserole in the morning.,
    In the morning mix the sausage and the soup together and spread over the egg and bread mixture. Top with the grated cheese. Bake uncovered at 350 degrees for an hour. Serve with fresh fruit. Delicious
    You can also add some sliced mushrooms, peppers, or other seasoning. Enjoy.
