    Default Crockpot Lasagna

I had this at a friend's house last month and got the recipe from her and made it for my husband and he loved it. I know someone has already posted a similar recipe sometime back but this is just a little different. I think this is well worth trying.

    CROCKPOT LASAGNA

    INGREDIENTS:
    1 lb. ground beef *
9 lasagna noodles (regular noodles. No need to use no-cook noodles)
    1 Jar spaghetti sauce*
16 oz. cottage cheese, small curd
    2 cups mozzarella cheese, shredded
    2 tablespoons Parmesan cheese

    DIRECTIONS:
    • Brown meat and drain.
    • Spread one cup of spaghetti sauce in the bottom of the crock-pot.
    • Mix remaining sauce with meat.
    • Place 3 uncooked lasagna noodles on top of sauce in crock-pot. (I place one down the center and break 2 inches off the end of the other two and lay them on either side of the center lasagna noodle and fit them in as best as I can).
    • Spread 1/3 of the meat mixture on top of the noodles. (It may not spread evenly, don't worry).
    • Spread 1/2 of the cottage cheese over the meat mixture.
    • Top with 1/3 of the mozzarella cheese.
    • Add another layer of uncooked noodles, then 1/3 of the meat mixture, and the remaining cottage cheese on top of meat, and 1/3 of the mozzarella cheese.
    • Place another layer of uncooked noodles, the rest of the meat mixture and mozzarella cheese. Sprinkle with Parmesan cheese.
    • Cook on low for about 3 hours. (My crock-pot cooks it in about 2 1/2)

*I use 1/2 ground beef and 1/2 Italian sausage

Be sure not to take the lid off before the allotted time!!

Actually you cook it on low the whole time. I wouldn't have believed it if I hadn't done it myself. Follow recipe exactly as shown.

This sounds good, Gerri. It's hard to imagine there would be enough liquid to cook the noodles.

I thought the same thing but having made this twice already I can promise you it is enough. Don't be tempted to add anything else. Another thing - I do not like cottage cheese AT ALL but decided to follow the recipe as written and can't even tell it's cottage cheese in the finished lasagna. It is so simple that I just didn't think it would work but I was delighted with the results. And it is so quick to put together. Just the kind of meal I like to prepare. Leaves me more time to get back to sewing projects. lol

Any particular size crock pot? I have a larger oval one and the standard round one... This is right up my ally"))))

I have the large oval one, too. One lasagna noodle fits perfectly down the center. Then breaking off an end off each of the other noodles allows it to sit perfectly. After I broke off the end I broke off the tiny corners on one either side. Try it, I don't think you will be disappointed.

Oh yum! Lasagna is a family favorite. I put a copy of the recipe in my recipes folder. I am looking forward to making it.
