    Default My Easter assignment

    is to bring a fruit salad. DH would like it to be a citrus salad. Anyone have a great recipe you would like to share?

    Here is one that we like.

    Refreshing Fruit Salad

    1 quart strawberries, hulled and halved (or quartered if large berries)
    1 small can mandarin oranges, drained
    1 can pineapple tidbits, drained (reserve juice)
    1 cup green or red grapes
    1-2 bananas
    1/4 cup pineapple juice
    1/4 cup lemon juice
    1/4 cup honey

    Whisk pineapple juice, lemon juice, and honey together until well blended. Mix fruit except bananas. Pour dressing over fruit. Refrigerate overnight or several hours. Just before serving, slice bananas into salad and mix gently. You can use more fruit if you'd like - I usually add more strawberries and grapes than the recipe calls for and it's still yummy.

    That sounds yummy, I will give it a try, maybe add a couple other citrus fruits, some grapefruit and oranges would work, maybe even kiwi. Thanks for sharing it.

    I forgot to add 1 pint of blueberries - I tried to correct it in the original recipe but I can't! Sorry, and yes, you can add other fruit. Let me know how you like it. :-)
