    Default Superb Potato Soup

    Potato soup recipe
    8-10 red skinned potatoes peeled and cubed
    1# bacon
    3 stalks celery diced
    1 med onion diced
    1 pint heavy cream
    2 boxes chicken stock
    1 stick butter
    1/2 cup flour
    shredded cheddar cheese for garnish

    In lg pan or dutch oven,
    cut bacon in to small pieces..fry til crisp
    remove bacon leaving drippings in pan
    saute celery and onions till tender
    add peeled, diced potato's stir until completely coated
    add chicken stock, and cooked bacon, cook until potato's are tender

    melt butter add flour and stir to make a roux
    add roux to boiling pot to thicken soup
    stir in heavy cream (can mash a few potatoes in the pot to additionally thicken
    ready to serve
    ENJOY

    That's a great recipe... My mom always used green onions, it gave the soup a pretty look. LOL.

    I love potato soup.

    Sounds yummy and makes a lot of soup. I wonder how it freezes.

    I made a big batch of Bernice's Taco soup last week and froze several containers for later. I'm the only one here that will eat soup, but I did send some home with the kid when she came over.

    Milk based soups do not freeze well. I would just cut the recipe in half, and eat on it for a couple of days.

    This recipe sounds delicious - potato soup is one of my favorites. Thank you! I was just thinking recently that it will be nice to make potato soup when the weather here cools.

    Sounds wonderful. If you plan on freezing it then leave out the cream or milk and then add that later after it is defrosted. Potato soup or chili, my two favorite things when weather turns cold!

    That sounds wonderful. Potato soup is one of my favorites. We love bean soup, too.
