Watermelon Jelly?!?
We have a bunch of melon leftover from the wedding reception. We found a recipe for watermelon jelly. Has anyone ever made it, or eaten it?

Re: Watermelon Jelly?!?
Nope - but I made watermelon mousse once, and it was delicious. Don't have the recipe, but perhaps you can find it online. It gets frozen, so will keep for awhile.

HI
I made watermelon jelly once, but I mostly do this

It is very tasty especially with a sprig of mint.

A quilt to give to comfort those I love in times of hurt, fear and uncertainty.
And the courage to keep on sewing when life itself seems held together by a single thread of hope.

Re: Watermelon Jelly?!?
When I was young we had a mexican housekeeper. My step dad told her to to cut up a watermelon that day. She blended it. I watched that video and now I know why. He wasn't mad she was a supeer nice lady that played games with me all the time.
Sorry to hyjack.

The juice looks like a refreshing drink. Might do that with the other half!

Re: Watermelon Jelly?!?
I tried to make watermelon jelly before. Epic fail!
I know people like the rind pickles, but I tried honest to goodness jelly.
What I do is puree the leftovers with a tad bit of sugar and serve as a "slushie."
It will keep in a mason jar in the fridge (big mason jar..lol) for a while if you add some sugar. Excellent for watermelon that's begun to dry or get a little pithy.
I've also frozen it in hunks to be pureed later with whatever else for a nice frozen treat.

Re: Watermelon Jelly?!?
Just don't dehydrate it.
My daughter and I got sick off of dehydrated watermelon and we only had ONE bathroom at the time ...
