    Default Impossible Pumpkin Pie

    Makes it's own crust!

    3/4 cup white sugar
    1/2 cup biscuit baking mix such as bisquick
    2 tblsp butter/ marg
    1 12 fl oz. can evaporated milk
    2 eggs
    1 15 oz. can solid packed pumpkin puree
    2 1/2 teasp. pumpin pie spice
    2 teasp. vanilla extract


    *Preheat oven to 350 F. Lightly grease 9 inch pie pan
    *In large bowl combine sugar and baking mix. Stir in butter, milk and eggs. Beat in pumpin, spice and vanilla to mixture until smooth. Pour into pan.
    *Bake in preheated oven for 50-55 mins or until knife inserted in center comes out clean.

    I used to use this recipe a lot. Haven't made it in years though. Last pumpkin pie I made I substituted Splenda for sugar - same quantity - and it works just fantastic for those who are watching sugars and or carbs.

    This is the easiest pumpkin pie recipe, I have had this one for years and love it. I also have another pie recipe that makes it's own crust will find it and post it.
