I also am the proud owner of 2 wonderful 3 thread sergers. I love them for finishing seams for clothing and home dec. Don't use them for quilting. Coverlock is a stitch the newer machines do. Mine will not do it. It is the wide serged looking stitch on the outside of some athletic clothing.

April, you can do that with the old 3 thread sergers. It takes some tension adjusting, but I used to do it with some of my daughters t-shirts when she was a kid using variegated thread. Mainly you loosen the lower looper thread, serge the seam and then pull it on both sides and the threads will lay out and you have a flat seam. Might not be exactly the same, but it is pretty darn close.

a coverlock machine produces those nice double stitchlines on the hem of most store bought garments that you see. I hope to get one soon

A coverstitch has no knife. If you make muslins for patterns, just use a chain stitch and instant rip out. Coverstitch also have FEET.

I have an Babylock coverstitch that makes great piping. Better than the foot on the sewing machine. It also does pintucks, hemmers and belt loops. I've used fancy threads in a 3 thread. But sometimes getting the knife out of the way is not easy. The Janome coverstitch looks more like a sewing machine than a serger. Has more harp room. The coverstitch feet for the Evolve fit the coverstitch only.

I love my Pfaff Coverlock machine. It does regular serging also of course, but the coverlock stitches can do several decorative things. And you can easily make quilts or table runners with it.

You do need to make it a point to learn to use. My dealer has a great Serger club where I've learned a lot.
