    I use to make duck soup. There was a great recipe by James Beard for it. His trick was that you used the carcus of 2 ducks. The soup was so rich and flavorful. I would think since goose is bigger you may not have to use 2? I never see goose around anymore, we use to have it for Christmas years ago. I miss it.

    I had a goose for the very first time this Christmas Day Eve, at a friends. Actually, the were 'goose boobs' cooked on the grill. DELICIOUS! Tastes a lot like turkey dark meat...
    I really need to get off the exclamation point.
    It may give people the idea that I'm bright and cheerful all the time....
