    Default Shortening vs butter

    I found a cake recipe that calls for shortening. I would like to substitute butter. I have done that with cookies & breads but know cakes are a more delicate chemical reaction. Any input is welcome. And the recipe name is Buttery Cinnamon Cake. Well there is a butter, sugar,and cinnamon syrup to pour over the cake while it is still warm.

    You really should be okay doing that, but realize your cake will be a bit heavier if you use butter. The shortening will yield a lighter texture in your cake.
    Sometimes, when there's a raging fire,
    it's best not to try to put it out with gasoline.

    Thanks Sandy. The lighter cake sounds better . Hope I can find shortening . It is not used much here.

    Dang, Sandy - Mom and I were just speaking of this on Saturday - how I use butter when I make my biscuits and she uses Crisco. And how much better pastries are when made with lard.
    Thanks, I did NOT know that about the ratio with shortening - butter.

    PS. my biscuits are better than my Mom's. It's in the butter and light hand.

    Yuck on the lard. Crisco is vegatable based.

    You make tamales with lard and the masa is light and fluffy. You make them with shortening and no one wants to eat them.
    There are many good things to be said for animal fats.
