    Default Pasta E Fagioli- my new favorite soup!

    Pasta E Fagioli- my new favorite soup! It is a chili, vegetable soup...must try it!!

    1 1b ground beef
    1 onion, chopped
    1/2 small bag of baby carrots, chopped
    3 ribs celery, chopped
    1 clove garlic, chopped
    1 can dark red kidney beans
    1 can white kidney beans or your choice
    3 cans of beef broth*
    1 small can tomato sauce
    1 can brooks chili tomatoes or tomatoes of your choice
    3 tbsp parsley
    1 1/2 tsp oregano
    1 tbsp cumin –opt ( I add)
    1 tbsp Italian seasoning-opt ( I use)
    1/2 box of whole wheat or regular macaroni

    Sauté beef with onions for several minutes. Add garlic and stir well. Add carrots, celery and tomatoes and simmer for 10 minutes. Drain and rinse beans and add to the pot. Add the beef stock, oregano, salt/pepper, cumin and Italian seasoning. Add the macaroni and simmer 45 minutes. Can serve with parmesan cheese.
    *You can control the thickness of this soup by adding or decreasing the amount of beef broth
