I used to have a subscription to _Victoria_ years ago--it is a beautiful publication.

If your purple beans are like mine, they will turn green when canned. Wax beans stay yellow, so it might be a two-color three bean salad.

I prefer all purpose. Bread flour seems to result, for me, in a very dry loaf.
