yummy apricot bread

  • yummy apricot bread

    2 cups flour
    1/2 cups sugar
    1 cup chopped apricots
    3 egg whites
    1/4 cup milk
    3 tablespoons butter, softened

    Preheat oven to 350
    Mix all ingredients. Dough will be on the dry side.
    Cook in 11 x 7 loaf pans for 25-30 min.

    This sounds good! What kind of apricots did you use? Fresh, canned, dried?

      Ohhhh......Laura, this bread sounds delicious!
      My dad (he passed away in 1993) loved apricots! I am going to make this bread to be sure! Thanks so much for sharing. My MIL(she's my 1st DH Terry's mom. Terry passed away in 2002 and yes, I still consider Terry's mom my MIL!) always makes this delicious Nut Bread for my B-day and Christmas. It's a recipe found in an Betty Crocker Cookbook from the 1920's-30's I think. I love that cookbook! There's some awesome recipes in there. Another favorite from that same cookbook is a recipe for donuts that I have made for years.

      (Here's the Cookbook I am referring to. I wanted to mention the year this book came out, but my copy is in the cupboard that is above my fridge and I don't climb on my step stool any more without someone in the house to get it for me. I think this cookbook was published in the 1940's around the time of WW II. There's some awesome recipes in this book.)

        Well, let's see, the 'cots weren't fresh off the tree and they weren't canned but they weren't hard like dried fruit either. I got them at the date store. Next I will make some of this bread with the dates. Boy is growing dates ever a long labor intensive process. I can see why they cost so much.

          Sounds really good - and the date version, too! Of course I would probably add nuts to both - Sugar, I will have to check out the Nut Bread Recipe.

            Not if you were as allergic as I am! I have substituted sunflower seeds when the recipe needs the crunch.

              I plan to use apricot jam when I make my bread.
              You said the bread was dry. Using the apricot
              jam should keep the bread from being so dry.
              Nothing’s better in the winter than home made bread.
