    breakfast casserole

    Hello All,
    I think I'm going to be doing a brunch on Christmas Morning. I'm looking for a simple breakfast casserole to serve. I just need a casserole large enough to feed 8 without a lot of exotic ingredients.
    The ladies here have lots of good recipes, so I'm hoping someone has one for a breakfast casserole.

    Hashbrown Casserole Recipe


    • 32 oz frozen shredded hash browns defrosted
    • 1/2 cup melted butter
    • 1 10 1/4 ounce can of cream of chicken soup (or cream of cheddar)
    • 1 pint of sour cream
    • 1/2 cup onion finely chopped
    • 2 cups grated colby cheese
    • 1/4 teaspoon pepper
    1. Preheat oven to 350 degrees F.
    2. Combine all ingredients in a large bowl reserving 1/2 cup of cheese for topping.
    3. Place in a greased 9×13 casserole dish and top with reserved cheese.
    4. Bake for 45-55 minutes or until hot and bubbly.

      I don't eat meat so I would be making this veggie loaded dish. You could always scramble some sausage in.

        Strata is very popular. My neighbor always makes this one. She serves a meat, ham or sausage, on the side. there's a million variations. you prepare it the night before, bake it that morning. yummy.

          I make Laura's casserole every year. Last year I subbed out the soup with Campbell's Cream of Bacon and there were no complaints or leftovers! It was really good. Sometimes top with canned FF onions put on the top for only about the last 10 mins of baking and that is good too.

            Here are a couple I've tried and they both turned out really good. I serve them with a fresh fruit salad.

              Hi Laura P,
              I used your recipe for a church potluck. I made it with Cheddar Cheese soup. There wasn't a spoonful left.
              My sister sent me a recipe for breakfast casserole that her DIL uses all the time. I will use it for Christmas Brunch, as it everything in it.

                Yum these sound really good. I've made the Hash Brown one many many times. I need to shake things up a bit. I just found out that I'm having an overnight guest Christmas night, so the new recipes will come in handy.
