    Cheese Meatloaf Muffins

    I'm sharing this recipe as requested. It is easy to make, delicious and freezes well. I usually double/triple recipe, and adjust spices to your taste.

    In a large bowl, add:
    1/2 cup of ketchup
    1/2 cup fine bread crumbs
    2 eggs, beaten
    1 pkg onion soup mix

    Mix together and add 2 lbs lean ground beef. I wear plastic gloves and mix altogether. It should be a squishy consistency.

    Divide the beef among 6-8 large muffin tin cups lined with paper cups (or not). Keep some to cover.

    Push a hole in the middle, and add a 3/4" to 1" cheese cube. I use whatever I have on hand, cheddar, havarti, Gouda or Monterey jack. Cover with the remaining beef.

    Bake 30-40 mins at 350 until cooked.

    Let cool thoroughly and wrap individually if freezing. One is usually sufficient for one person.

    OPTIONS:
    1-I have used ground turkey and switched spices to add sage, savoury or use your favorite spices for turkey. I also added some leftover cranberry sauce, and reduced the amount of ketchup.
    2- I have also used pork and veal with BBQ sauce instead of ketchup.

    This is a favorite with the grandkids.

    Thank you Suzanne for sharing. I will definitely make this. Now, would you consider sharing your orange/ ginger cookie recipe? We are cookie holics around here so I'm always looking for something different.

        I have a recipe that makes the dry french onion soup mix. Makes a cup that can store for up to 6 months. 5 Tbls = a package of soup mix.

              Yes Kathy. I would love your recipe for onion soup mix.

              Also for ginger orange cookies, you can use the jars of grated fresh ginger.

                  Glad I checked in this morning. Going to grocery store and I'm so tired of standing in front of the meat counter trying to come up with something to cook. Going to try this Suzzanne thanks for sharing.
