I have fallen in love with refrigerator cookies. I spend a few hours one day just mixing cookies, roll them into logs, wrap in plastic and freeze. Then when I need a fresh batch of cookies for company or just the two of us I pull out a log of dough, slice and bake. I make several varieties and freeze in smallish rolls so each one will make about a dozen cookies. Do you have a favorite recipe? Care to share?
Cream Cheese Refrigerator cookies
1 cup butter-softened
4 oz. cream cheese-softened
1 cup sugar
1 egg yolk
2 & 3/4 cups flour
Cream butter & cheese until fluffy.
Add sugar & mix well.
Add yolk mixing well.
Slowly add flour until dough forms a ball-I sometimes have to add a bit extra flour to make dough less sticky.
Divide dough in half & roll each into about a 2 & 1/2 inch diameter log.
Wrap in plastic, freeze until ready to bake.
To bake let set at room temp. for 10 min or so, slice into 1/4" slices bake on parchment lined cookie sheet for 10-12 min. at 350 degrees.
I sometimes add about 1tsp. lemon extract and 1T. lemon zest. Today I baked up some orange/cranberry ones, added 1T. orange juice concentrate and chopped cranberries to the dough before freezing.
