    APPLESAUCE MOLD

    2 c. applesauce
    1/2 c. hot cinnamon candy (Too spicey. I used only 3 oz. or ~1/3 c.)
    1 box lemon gelatin (I usually used 2 - 1.5 oz. boxes)
    1/4 tsp. salt
    1 c. cold water
    1 sm. can crushed pineapple, drained (I used 7 oz.)
    1/2 c. chopped celery
    1/2 c. chopped nuts (I used English walnuts)

    Heat applesauce; stirring constantly, melt candy in it. Add gelatin & salt & stir until gelatin is dissolved. Add cold water & chill mixture until it begins to set. Add pineapple, celery, & nuts. Chill until firm. Yield 8 servings.

    I used to make this jello mold for special dinners / holidays / potlucks. I haven't made it since I developed Type II Diabetes. But it's always been one of my favorites. It's from a cookbook called "Favorite Recipes of the Great Northwest," which I've probably had for 40+ yrs. I couldn't find a publication date. It's heavily taped to keep it from falling apart!

    I actually might make this one. I go to my stepdd's and it's crazy crowded, more like a friendsgiving. I think I can afford this one. lol

    Forgot to say thats a 9 inch pie.

    Apple custard pie? Slice a peeled apple thin and arrange a layer of slices on the bottom and sides of an uncooked pie shell. Beat 3 eggs, then add 2 1/2 cups milk, 1/3 cup sugar, and a teaspoon of vanilla. Pour carefully into the apple-lined shell and sprinkle with cinnamon. Bake at 350 for about 45 minutes, til a clean knife inserted halfway between the edge and center comes out clean. Cool before serving. Its good with a little caramel drizzled over it too

    Taffy Apple Salad

    1 Tablespoon flour
    1 egg, whipped well with a fork
    2 Tablespoons apple cider vinegar
    1/2 cup sugar

    Put the above ingredients into a small pan over low heat and cook until thickened. Cool Completely.

    1 8-oz container Cool Whip
    4 cups diced apples (peeled or unpeeled)
    1 small can crushed pineapple, well drained
    1 cup cocktail peanuts

    Add the fruits and nuts to the thickened mixture and mix well. Fold in the Cool Whip and chill for at least 2 hours before serving.

    Another simple salad is to prepared 2 small packages orange Jello using apple juice/apple cider as the boiling liquid and water for the cool liquid. Chill the jello and when it's thick enough fold in diced apples, chopped walnuts and diced celery. Sorry, no measurements on this but it's really different and tasty. I make this one every year for Thanksgiving.

    Looking for tasty apple recipes

    DGD Catherine is hosting Thanksgiving dinner, she and her DH are making the turkey, gravy and stuffing and everyone is bringing the side dishes and desserts. Each year there is a food challenge where everyone tastes and votes for the dish they liked best. This year's Challenge is Apples so I want to do something simple but tasty as my entry.
