    Navy bean soup

    It's a cold rainy day here--time for some soup! I have a day off today so I thought I would make this in the crockpot and work on my halloween quilt. My mom used to make this with a ham bone, but since I don't have one, I'm using a small ham steak instead.

    My Mom's Navy bean soup

    1 lb. dry navy beans, soaked overnight, rinsed
    1 c. finely chopped celery
    1 c. finely chopped onion
    1/2 c. finely chopped carrot
    1/2 c. finely chopped green pepper
    14.5 oz. can diced tomatoes
    About 1 cup ham chunks
    2 fresh thyme sprigs
    Chopped fresh parsley, about 2 Tbls.
    1 tsp. chicken soup base (optional)
    1/2 tsp. black pepper
    1 tsp. salt (optional-I personally don't use)

    Put everything in your crockpot and add enough water to cover. Cook all day on low. Add more (hot) water while cooking if it looks like it needs it. At the end I usually take out about a cup of the beans/vegs and mash 'em up and put them back in the soup to thicken it a little bit.

    I'm going to make some cornbread to go with. Yum!

    Thanks for the recipe - it sounds delicious. I'll copy it and save to make it later. For future reference - I bought a 12 oz cut of salt pork, cut it into 3 - 5 oz pieces, and froze them. Now, when I need some ham seasoning, I can just pull out one of these pieces and use it.

        Sounds like mine, except I use a little tomato paste instead of tomatoes. I gag on chunks of cooked tomato, old childhood horror tale.

              I can relate to that. The only time I threw up in grammar school was after eating tomato soup. It took me until my thirties to buy some gourmet homemade soup in a deli section. I'm sort of over it. lol

                  I make this a lot in the winter. I do not soak my beans, I cook them in the pressure cooker with barley and the ham shanks. Cuts the cooking time down a lot!

                  When I eat it, I always put vinegar in my bowl.....love it that way!

                    I always put vinegar in my bowl too! Thought it was a family thing. Didn't know others did it too.
