    I do, Lorie.
    Wash them, slice them thin on a tray lined with parchment paper, and freeze them. Once they are individually frozen, I pack them in ziplocks.
    I really need to get off the exclamation point.
    It may give people the idea that I'm bright and cheerful all the time....

      I am dehydrating some this year. I'll put them in soup next winter.

        Zucchini or Pear Bread

        3 eggs
        1 to 2 c. sugar
        1 c. oil
        1 T. vanilla
        2 c. zucchini, grated or unpeeled pear, chopped
        3 c. flour (may use 1/2 whole wheat)
        1 t. salt
        1/2 t. baking powder
        1 T. cinnamon
        1 c. raisins or nuts

        Combine as for quick bread and bake in 3 med. loaf pans for 1 hr. at 325F.

        Use less sugar for pear bread and if you're adding raisins.

        This goes quickly in a food processor. Chop pear: add liquids and spices; process; add dry ingredients and process only 'til moistened.

          Sue, I have always grated my zucchini and froze it. Measure it for the amount I would need for zucchini bread. Works well.

              I live in South San Francisco, which is another word for FOG!
              But this year I have a great zucchini crop. Every neighbor has
              benefited from my bounty. Husband and son don't like it but they
              just ate half of my zucchini bread. Thanks for all the recipes.

                I really like zucchini bread but don't make it because of all the sugar and oil. Anyone have a recipe with less oil and sugar?

                  This is our favorite for zucchini. Slice it lengthwise, marinate in lime juice,olive oil , salt to taste, and Tequila then grill. -at my sisters we use an outdoor grill. I live in an apt so I use a cast iron stove top one.

                        You could send some to me... Yes.. Send me lots. I can come up with two ideas.. Skibobs with Pork and Zucchini strung every other and Corn pudding but layer the insides with zucchini. You can freezer it by getting those Rubbermaid containers for the fridge and add water while making an account for expanding and pressure. After you have sliced them the way you want it.                           Here is the recipe for Garden Chowder...

                          2 medium zucchinis cut into pieces
                          1 medium onion, chopped
                          2 Tbls Fresh Parsley, minced (I used 2 tsp. of dried)
                          1 tsp dried Basil
                          1/3 C Butter
                          1/3 C Flour
                          1 tsp Salt
                          1/4 tsp Pepper
                          3 C Vegetable Broth
                          1 tsp Lemon Juice
                          2-3 Tomatoes, diced (I used a 12oz can of diced tomatoes, drained and rinsed)
                          1 12oz can Evaporated Milk
                          1 12oz can of Corn, drained
                          1/3 C Parmesan Cheese, grated
                          2 C Cheddar Cheese, grated

                          optional: 1/2 pound cooked, diced Chicken ( I didn't add it, the soup was hearty enough without it)

                          Directions:

                          Over medium heat saute the onion, zucchini, parsley and basil in butter until vegetables are tender. Stir in flour, salt and pepper. Gradually stir in vegetable broth. Add lemon juice; mix well. Bring to a boil; cook and stir for two minutes. Add tomatoes, milk and corn; bring to a boil. Reduce heat, cover and simmer for five minutes or until corn is tender. Just before serving, stir in cheese just until melted. Serve and say, "Aaahhh"

                              I spent the day on Monday blanching and freezing zuchinni and yellow squash. All the reading I did said it needed to be blanched first. This is what I've read- ( Like all vegetables, zucchini has enzymes within that will soften, discolor and deplete nutrients in the produce over time, even when frozen. Blanching — a quick bath in boiling water — will destroy the enzymes and any bacteria that may be lurking.)
                              I sliced so e and shredded some and cut some I to strips so I will have options when I want to use it. I did find this recipe that sounds yummy...not so healthy, I'm sure, but yummy...Buns In My Oven » Cheesy Zucchini Rice
