    Italian Cream Cake

    Italian Cream Cake

    1 stick margarine 1 tsp baking soda
    ½ cup shortening 1 cup buttermilk
    2 cups sugar 1 tsp vanilla
    5 egg yolks 1 small can coconut
    2 cups flour 1 cup chopped pecans
    5 egg whites

    Cream margarine, and shortening, add sugar, and beat until smooth. Add egg yolks, and beat well. Combine flour and baking soda and add nuts to mixture alternately with buttermilk. Stir in vanilla. Add coconut and nuts. Beat egg whites until stiff and fold into mixture. Pour into three greased cake pans. Bake at 350 for 25 minutes or until done. Frost with cream cheese frosting.

    Cream Cheese Frosting

    1 (8 oz) package cream cheese
    ½ stick margarine
    1 box powdered sugar
    1 tsp vanilla
    Chopped pecans

    Beat cream cheese and margarine until smooth. Add powdered sugar and vanilla and beat. Frost cake and top with chopped pecans.

    ** I don't always separate the eggs and the food police have not showed up yet...)

    what size cake pans are needed? Is this a layered or can I use a 9x13 to make it easier.

      LOVE this recipe.....I also add MORE coconut between the layers. My husband NOW has two favorites this one and German Choc

            I do use a 9 x 13 pan; adjust baking time to ab out 45 minutes....just keep an eye on it. My pans in 8 inch rounds. My friends love this cake!!
