    Impossible Pie (crustless coconut custard pie)

    Heat oven to 350 degrees.

    2 cups milk
    1 cup shredded coconut
    4 eggs
    1 teaspoon vanilla extract
    1/2 cup all purpose flour
    8 tablespoons butter
    3/4 cup sugar
    1/4 teaspoon nutmeg

    Mix all ingredients except for the nutmeg in a blender (I used an immersion blender and it worked fine). Pour into a greased and floured pie pan. Sprinkle with nutmeg.

    Bake 45 minutes.

      Looks very similar to the recipe I posted on 11/29/13.....


      Impossible Pie

      Do you like custard? Do you like coconut? Do you like making a pie and not have to make the crust? This is the most simplest pie I have ever made and it is delicious...so simple!

      2 cups of milk (skim works well too)
      4 unbeaten eggs
      3/4 cup of sugar
      1/2 stick (1/4 cup) of butter or margarine
      1/2 cup flour
      1 cup of coconut
      1 1/2 tsp of vanilla
      dash of salt

      Blend all the above ingredients for a few seconds in a blender; pour the mixture into a well buttered 10 inch pie plate/pan. Sprinkle with nutmeg.
      Bake at 400 degrees for 15 minutes; then bake at 350 degrees for 20-25 minutes (until set)
      It makes it's own crust!!!!!

      Let cool and enjoy!!!!!

          So glad you posted the recipe. We'll be celebrating DH's 80th Bday on Sunday and I was trying to think of another dessert to go with the big whipped cream cake I've order. The coconut custard pie will be great as it is one of DH's favorites. By having an additional dessert I'm hoping there will be a little of the whipped cream cake left so DH and I can enjoy another piece after everyone has gone. home.

                  Since the butter is going into a blender. I don't think it matters...I did my recipe with softened butter (at room temp).....

                    Sorry, I was gone all weekend.....I just used it straight out of the fridge because it went into the blender and then into the oven. I don't think it matters.
