    Chicken Riggies

    CHICKEN RIGGIES

    2 lb. ~ Skinless chicken breast
    1 ~ Stick of butter (the real stuff)
    1 Tbs ~ Chopped garlic
    1 ~ Large onion (chopped)
    2 ~ Green peppers (chopped)
    3/4 C ~ Sweet wine (optional)
    3/4 tsp ~ Dried red pepper
    3/4 tps ~ Dried basil
    1/2 tsp ~ Salt
    1/4 tsp ~ Pepper
    15 oz can ~ Tomato sauce
    15 oz can ~ Diced tomatoes
    1/2 C ~ Fresh chopped mushrooms
    1/2 pint ~ Heavy cream
    1/2 C ~ Grated parm. cheese
    Box of Rigatoni pasta


    ~Cube and FLOUR chicken. Cook in melted butter until tender.
    ~Add all ingreds. EXCEPT for cream, shrooms and cheese.
    ~Simmer for one hour.
    ~Start pasta, add remaining three ingreds. to sauce.
    ~Spoon over pasta and enjoy!!
    Serves: Never enough

                I'm going out on a limb here and guessing, but maybe cuz it is chicken with rigatoni....what do ya think?

                    Hey Blondie.. Hubby wants me to make this soon. If I don't use the wine, would chicken stock be ok to make up the 3/4 c of liquid?

                      Yes, I don't always have wine. And I use just about any wine that is in the frig. LOL. But chicken stock would work fine.
