Braised Swiss Steak- From White House Cookbook

2 tbsp butter
1 large onion, thinly sliced
2 cloves garlic, minced
6 (10 oz.) steaks from top round
2 tbsp flour
2 tbsp oil
1 tsp fresh thyme or 1/2 tsp dry
1 bay leaf
2 cups beef broth
2 cups, each carrot, celery, onion sliced
1 cup fresh parsley

1. Melt butter in large pan; sauté onion, garlic. Set aside
2. Season meat with salt and pepper. Dredge lightly with flour.
3. Heat oil and sear meat.
4. Add beef broth and simmer 1 hour.
5. Add vegetable and simmer 20 more minutes.
6. Arrange meat on platter, spoon veggies on each steak and sprinkle with parsley.
(I sear the meat, and then put in pan with broth and veggies. Bake 1 hour or until tender)
