Thanks so much everyone!! What a wonderful group of recipes for this event!! Now I don't know what to choose….but I AM going to take Miss Sheri's sinful apple dip for snacks…I don't think any of the girls at the retreat will propose marriage, LOL!!
Not sure which of the salads yet…but definitely one of them!!

Here is another pasta salad recipe that is really delicious:
PASTA SALAD
2 Bags of the spiral multi flavor garden pasta
1 package mixed frozen peas and carrots
1 Package ham
1 block cheese...any kind.. I use half pepper jack and half cheddar or colby
2 Bell peppers...I use yellow and red
1 Bottle Kraft Italian dressing/marinade
1 bottle Roasted Red Pepper Parmesan dressing
1 small piece red onion (optional)
1 jar of green or black olives (optional)
●Boil pasta accordingly, drain & let cool
●Dice bell peppers.....as small as you want...not too small
●Cut cheese & ham into small pieces
●Cut olives in half or as desired
●Combine everything along with defrosted peas and carrots to the cooled pasta.
●Dice about 1/4 of red onion and add with everything else to pasta.
●Add half of each bottle of dressing and mix until all is covered....save the rest to add a little as needed before serving.
I throw the peas & carrots in with the boiling pasta about a minute before I drain.
This makes a lot of salad!

I have a wonderful recipe for pasta chicken salad.....easy to make, keeps well and feeds a ton. Here tiz:
Carol's Chicken Salad – with Pasta
1/2 roasted chicken (I use a store bought one without special flavorings) skinned and cut into bite size pieces
1 dry C. Corabella small tri-color cheese tortellini - cooked al dente and cooled (or any brand you prefer)
1 dry C. mini Ziti or Penne - cooked al dente
3/4 C. diced dried cranberries
1 celery rib diced or 1 tsp. Celery seed
1-1/2 C. grated parmesan cheese (can use more or less to suit your taste)
Mayonnaise to moisten
Salt & pepper to taste
Combine ingredients and mix in mayonnaise to the proper consistency and taste.
Chill and recheck consistency/seasoning.
Note: Mixes best when pasta is still warm

this is my recipe for pasta salad
DELI-STYLE PASTA SALAD
1 pkg (16 oz ) tri-color spiral noodles
2 medium plum tomatoes, seeded and julienned
8 oz salami , julienned
8 oz provolone cheese, julienned
1 small red onion , thinly sliced and separated into rings
1 jar (5 3/4 oz) stuffed green olives sliced and drained
1 can (2 1/4 oz) sliced ripe black olives drained
1/4 cup grated parmesan cheese
1 bottle (8 oz ) italian salad dressing
Cook pasta according to package directions. Drain and rinse with cold water, put in a large bowl. Combine pasta, tomatoes, salami , cheese, onions, olives and parmesan cheese. Add dressing an toss to coat. Cover and refrigerate for several hours or overnight. yield 12 servings.

I make the following salad all the time. Everyone loves it!
Tear Romaine and Leaf Lettuce and wash thoroughly. Dry lettuce.
1 can drained Mandarin oranges
sliced thin red onion
toasted sliced almonds
Marie's Poppyseed dressing
I put all ingredients in separate, small plastic bags except the lettuce and the dressing. When ready to serve toss everything together and mix in some of the salad dressing.

My favorite salad to take to potlucks, etc. is Five Cup Salad. Some people call it Ambrosia...
1 c. canned mandarin oranges, drained
1 c. crushed pineapple, drained
1 c. sweetened coconut
1 c. mini marshmallows
1 c. sour cream
Mix all ingredients at least 4 hrs. prior to serving. Refrigerate. I usually double the recipe. Doubled, it should serve at least 12. It keeps well 2-3 days in the frig. JCY

Another good one is an orzo salad. Since it is a pasta, but really small it's not as heavy as a regular pasta salad. I don't really have a recipe, just put it together like a normal pasta salad. One can pineapple tidbits NOT DRAINED
One box instant pistachio pudding
One regular size Cool Whip
1/3 bag mini marshmallows
mix the pineapple pudding together (only those two things, nothing else), stir in cool whip, then stir in the marshmallows. It's yummy!

Honestly, I think your best bet is a three bean salad, but I've been known to make it a four bean, by adding garbanzos.
(I also like to add finely chopped green pepper....)
This salad is better the longer it marinates!
But I have an Asian slaw recipe, that can hold it's weight, as well. But I'm in Babyland, and my recipe book is home...

Lorie, this is a recipe that I made for a fly-fishing potluck dinner and ended up with my teen-aged son's doubled over with laughter as this "Larry the Cable Guy's Relations" type of fellow, [complete with the overalls and nasty wife beat shirt and back woods drawl] decided to loudly PROPOSE MARRIAGE to the person who made, "This there, candy apple dip, stuff" Hahahahaha!

1 bag of Broccoli slaw (found near the ready to eat lettuce)
2-4 green onions, sliced
4 oz sliced almonds
4 oz sunflower seeds
1/2 cup raisins
1/2 cup craisins
Dressing:
Mix together*:
- 1/2 cup oil
- 1/4 c vinegar
- 1/2 cup sugar
- 2 seasoning packets
*(I usually heat this a little in the microwave to dissolve the sugar.)
Pour over salad and toss. Chill in refrigerator several hours or overnight.
