Does it have to be a "Salad"? I have a Heath Toffee Candy Apple Dip served with sliced apples that just gets better and better the longer it sits. (I can never stay away from it for very long though). I always make it the day before I want to serve it so the flavors melt together more and more. Here is the recipe, just in case you could use it instead of a traditional 'salad'.
Heath Candy Apple Dip ( I always TRIPLE this recipe, but here is the original)
1 pkg Cream Cheese (When I triple it, I use 1 regular CC, and 2 of the 1/3 less fat kind)
1/2 Cup Brown Sugar
1/4 Cup Powdered Sugar
1 teas Vanilla
1/3 - 1/2 Cup heath toffee bits (you will find them in some stores by the Chocolate Chips, The milk choc. ones are even better)
(When I make a triple batch, I just use the whole bag of Heath Toffee Bits)
Mix Well, then refrigerate overnight. Serve with apples and or carrot sticks.
I have been known to cut up two large apples to eat by myself with this stuff because it's so hard to stay away from!

I usually do Greek or a Chinese chicken. I fry strips of won tons to go on that. You have to put the dressing on at the last min though. One time I mixed it in a parking lot. lol

It is Romain lettuce, green onion tops, broccoli florets, toast walnut pieces and chopped up Ramen noodles in 1/2 stick of butter, let them cool and add to lettuce. The dressing is 1 cup of oil, 1/2 cup sugar, 1/2 cup vinegar and 4 tbsp. soy sauce. If you make it, only dress half, once it is dressed..it wilts down.

How about three bean salad? My boss always requests it for our potluck party. Stupidly easy - three cans of beans. I wing it, but if you google it there are tons of versions. It travels/keeps well.

I usually do a pasta salad - I don't really have a recipe, I just kind of throw it together.
Rotini Pasta cooked (I usually use the tri-color) then add a bunch of chopped up veggies - carrots, green peppers, broccoli, cauliflower, etc. You can add grape tomatoes cut in half if you like them. Then add a bottle of Italian salad dressing - sometimes I add an additional dry packet, if it needs more seasoning - depends on how much you make. Can also add Parmesan cheese.
If you want something heartier, you can add pepperoni or chunks of ham.
Have fun at the quilt retreat! I haven't gone to one yet, but they sure sound like a good time!
