    Recipes Which Use Green Olives?

    I love olives. Green olives, black olives, doesn't matter. I love them. My wife is not so hot on them. I can understand how especially green olives with their very strong taste could be off-putting to some but maybe if she tried them in the context of a recipe rather than eating them with a fork like I do she might enjoy them.

    Anyone got any good recipes which use green olives? We have no known food allergies and are open to any type/ethnicity of food. Someone once prepared a yellow rice dish with green olives for me once and I believe they said it was a Puerto Rican thing but I'm not sure what it was called?

    I'm open to any ideas or suggestions.

    I am not fond of olives myself but have a recipe for cold pasta salad the uses both green and black ones if you are interested I will look it up. I love this salad on a hot day.

      Greek Spaghetti, it's a recipe that is easy to make and loved by many.

      I don't use measurements I just throw it together,


      - 1 med. sized onion
      - fresh garlic, a couple of gloves
      - extra virgin olive oil

      - 2 jars green olives sliced
      - 1 small can black olives
      - 1 package thin spaghetti
      - basil leaves (crushed) to season
      - grated parmesan cheese (optional)

      I like to chopped the onion and garlic very thinly and combine them with the olive oil in the frying pan. Wait until the ingredients are glassy (looking like glass or see through). Be careful you can burn them easily.

      Combine all the olives (green and black, after they have been drained) to the frying pan. Season with basil leaves and your topping for the Greek spaghetti is done. You may want to add a little bit more EvOo, but that will be to your liking.

      Prepare the spaghetti like the directions on package.
      Put them on a plate and top with olives use the grated parmesan cheese to sprinkle on top.

      Enjoy, (let me know how you liked it, should you want to try) It's a big runner in my family




      I don't use any spices except the basil leaves, in my opinion it doesn't need any salt, because of the olives.

        My DH loves green olives too! Crackers with peanut butter and a green olive on top. That's gourmet for him!

        I haven't made this recipe in years - forgot all about it - but it is very easy and quite tasty:

                If you LOVE green olives then a visit to the land of Olives is necessary. Start planning. Tapas in southern Spain often consisted of a bowl of very large, often broken olives with marinade. They were absolutely the most fantastic olives this olive lover has ever had. We made attempts to locate some in the local supermarkets (in Spain) so we could ship some home, but were told they were not available for 'commercial' sales . . . in other words, they kept the BEST for themselves. And, they are so delicious, who would blame them?

                I am a lover of kalamata olives though. Al and I love tortellini with kalamata olives, chopped artichoke hearts, ANCHOVIES, sun-dried tomatoes, feta cheese and a liberal dose of olive oil. Sprinkle grated Asiago cheese over the top and it is oh, so yummy.

                    Sandy you are so diverse..would love to sit and listen to stories of your past... really,,, you always take me away a bit..It's hard for me to think about doing all you've done...I'm the gal who married the HS boyfriend and been home since..LOL,, not complaining, just sayin'...

                      My first thought was PICADILLO! It's a Cuban dish and I love it! I'm not big on olives either, but I definitely will eat them in this. It's pronounced PICK a DEE yo. It's also the basis for Empanadas - a fried meat pie that is sooo good, too.

                      Recipe? Don't have one really. My Cuban friend Isabel taught me how to make it. I've got to run now, but I will try to put together a recipe ( or instructions may be a better word) and post later.

                        DELI-STYLE PASTA SALAD
                        1 pkg (16 oz ) tri-color spiral noodles
                        2 medium plum tomatoes, seeded and julienned
                        8 oz salami , julienned
                        8 oz provolone cheese, julienned
                        1 small red onion , thinly sliced and separated into rings
                        1 jar (5 3/4 oz) stuffed green olives sliced and drained
                        1 can (2 1/4 oz) sliced ripe black olives drained
                        1/4 cup grated parmesan cheese
                        1 bottle (8 oz ) italian salad dressing

                        Cook pasta according to package directions. Drain and rinse with cold water, put in a large bowl. Combine pasta, tomatoes, salami , cheese, onions, olives and parmesan cheese. Add dressing an toss to coat. Cover and refrigerate for several hours or overnight. yield 12 servings.

                        Enjoy!

                          Oh, love Picadillo!!!!!!!

                          Papi’s Favorite Picadillo
                          • 3 Tbsp olive oil
                          • 1 small onion, diced
                          • ½ green bell pepper, diced
                          • 2 cloves fresh garlic, pressed
                          • 1 ½ lbs. Ground beef
                          • 1 tsp. Salt
                          • ½ tsp. Pepper
                          • 1 can (8 oz) tomato sauce
                          • 1 small can tomato paste
                          • ¼ cup dry white wine (the cheaper, the better!)
                          • 4 Tbsp. Pimiento-stuffed green olives, sliced
                          • 1 small box of dark raisins
                          • ½ tsp. Cumin
                          • ½ tsp. Oregano

                          1) Heat the olive oil in a large skillet over medium heat. Saute the onion, green pepper and garlic until the onion is transluscent.
                          2) Add the ground beef and brown over medium heat.
                          3) Add the rest of the ingredients and continue cooking until meat is tender and completely cooked through. About 25 minutes.

                          4) Serve over white rice. Add tostones (fried plantain chips).
                          5) Makes 6 servings.

                            For a gal who grew up in a tiny little place (population less than 400), I have had a good life. Wanting to 'get out of town' I joined the US WAC and that's where I met my international BFF (ahhh, 46 years of bliss so far). His enthusiasm for life, his work ethic, and his adventuresome nature lead us around the world many times. Yes, I know, many have never had the experience - and I hope I don't flaunt it, ever. BUT, along with the experiences come other things you've never had to 'put up with' by staying close to home with your HS sweetie. It balances.

                              I love olives!!!!!! Green or black I love them all. It's my go to food as I often make antipasto just for snacking, or light dinners. At our local farmer's market there is a shop that sells the best tapenade. I'll buy three jars of the stuff and have to go back the next week because I'm out and needing more.

                              I do make my own tapenade though because it's easy to make. Green and mostly black olives, capers and olive oil in a blender and chop them coarsely. Great on a nice bread. mmmmm, my mouth is watering already. I make a great muffuletta sandwich using this tapenade.

                              When I was in Florida this past week, I had some time to kill and so I checked out a farmer's market nearby. I was really on the hunt for a bonsai dealer in the market, but came across a stand selling olives. I had to try their wares. They had a pretty good tapenade, but I bought a jar of their olive and garlic spread. It's delicious with triscuits. I had to stop eating it, because I want to try it on some pasta later this week. I also bought some New York Sour Pickles. omg, it's heaven.

                              I like to make a little relish sort of thing with green olives, capers, tomatoes (sometimes I leave them out), garlic, lemon juice, basil, and olive oil. Put it on top of a grilled swordfish or chicken breast.

                              I make a chicken spaghetti with green olives too. I don't have the recipe, I just make it up and have at it.

                              The other dish I like is potato salad with green olives. It's just potatoes, olives, onion, dill, a red pepper for color, and mayonnaise.
