Lemon Blueberry Bread
1/3 cup butter- melted
1 cup sugar
3 Tbsp lemon juice
2 eggs
1 1/2 cup flour
1 tsp baking power
1/2 tsp salt
1/2 cup milk
2 Tbsp grated lemon peel
1 cup fresh or frozen blueberries
Glaze: opt
2 Tbsp lemon juice
1/4 cup powered sugar
In a mixing bowl, beat sugar, butter, eggs, and lemon juice. Combine flour, baking powder, and salt- stir into egg mixture alternating with milk. Fold in peel and blueberries.
Bake at 350 at 60 to 70 minutes.
Remove from pan and drizzle with glaze.
