    Chicken Salad

    I package boneless, skinless chicken breast

    5 boiled eggs

    1/4 sweet onion, chopped well (Vidalia are good)

    1/2 large jar of Hellman’s mayonnaise (might need less)

    1/2 cup relish

    3-4 ribs celery

    Salt/pepper to taste

    Cook chicken and cool. Boil eggs, cool. Chop the chicken and eggs together in a food processor. Add rest of the ingredients, adjusting if needed. Refrigerate.

    Chicken Salad

    1 package boneless, skinless chicken breast
    1 can Pineapple Tidbits (not crushed); drain juice
    1/2 cup chopped pecans
    Dukes mayonaisse
    Salt & Pepper to taste

    Boil chicken until done; mince in food processor. Add pineapple and chopped nuts. Add mayonaisse, salt and pepper to taste.
    I don't measure the mayo; I just mix it in until it tastes right.
