    Berry Mallow Yam Bake

    We have this every Christmas and Thanksgiving. It has been a family tradition for years. Since marrying I still make myself at least one casserole even if no one else will eat it because I just love it so much. Sometimes my grandmother would make it for the Easter dinner table too.

    Yield: Approx. 8 Servings
    • 1/2 cup flour
    • 1/2 cup brown sugar, packed
    • 1/2 cup quick oats
    • 1 teaspoon cinnamon
    • 1/3 cup butter
    • 2 (28 ounce) cans yams, drained
    • 1 (16 ounce) can whole berry cranberry sauce
    • 15 large marshmallows (or enough mini-marshmallows to cover top of casserole)


    1. Preheat oven to 350*.
    2. Mix together flour, brown sugar, oats, and cinnamon; cut in butter (pastry blender makes this part easy).
    3. In large bowl, toss half of the crumb mixture with the yams and cranberry sauce and arrange in casserole dish.
    4. Sprinkle remaining crumb mixture on top.
    5. Bake for 35 minutes.
    6. Place marshmallows on top and put under broiler until marshmallows are golden brown and toasty.

    For easy cleanup you can make this in one of those throw-away baking trays you can buy at the store. Most of those will fit a double batch for those big family get-togethers.
