    Ham & Spinach Frittata

    Baked Spinach-Ham Frittata

    Prep: 10 min.
    Bake: 15 min.
    Stand: 5 min.

    * 6 eggs
    * 1/4 teaspoon dried basil, crushed
    * 1/8 teaspoon pepper
    * 1/2 cup chopped onion
    * 1 cup chopped red & green pepper
    * 1 tablespoon olive oil
    * 1 salad pack of fresh spinach
    * 1 bundle cilantro - leaves stripped and lightly chopped
    * 8 ounces chopped ham
    * 1/2 cup chopped Feta cheese
    * 5 pieces sliced Swiss cheese


    Preheat oven to 350 degrees F. In a medium mixing bowl combine eggs, milk, basil, and pepper. Beat until combined. Set aside.

    In a 10-inch ovenproof skillet cook onion and pepper in olive oil until tender. Stir in spinach and ham. Stir until spinach begins to wilt. Add egg mixture, and Feta. Cover with Swiss cheese slices.

    Bake, uncovered, about 15 to 18 minutes or until a knife inserted near the center comes out clean.

    Sprinkle with Parmesan cheese. Cover and let stand for 5 minutes before serving. Cut into four wedges. Makes 4 main-dish servings.
