    Mexican Lasagna

    Mexican Lasagna- Will make your taste buds tingle.

    2 cups prepared rice ( I used brown rice cooked in chicken broth)

    2 large tomatoes diced or use canned (I used a large fresh and a small can of diced)

    1 onion chopped

    2 tsp chopped garlic

    1 tbsp paprika

    2 tbsp chili powder

    1 tbsp cumin

    1 can corn

    1 can black beans

    1 package tortillas

    1 1/2 pounds ground beef

    Enchilada sauce

    Salsa Verde –don’t let this scare you, it is full of flavor

    2 pounds Mexican cheese

    Something to keep in mind is that this is an extremely flexible recipe. You can add or omit ingredients to your taste and whatever you do, this “Lasagna” will surely be amazing.

    Cook tomatoes, garlic and onion for about ten minutes. Add chili powder, cumin and paprika. ( I added 2 tbsp of taco seasoning for a little more spice).

    Add black beans and rice and cook for ten more minutes. Set aside. This is quite tasty as a side dish.

    Cook the ground beef. Once brown, add more of the “taco mix” (paprika, cumin and chili powder or Taco seasoning in the same amounts as before. You might have to add a little water to mix well. Now we assemble in a lasagna pan.

    1. pour a jar of Salsa Verde in bottom of pan

    2. layer tortillas like lasagna noodles

    3. Layer half of the rice mix

    4. spread 1/2 the cheese

    5. more tortillas

    6. pour on the enchilada sauce

    7. spread all the beef mix

    8. layer drained corn

    9. layer rest of rice

    10. rest of cheese

    Bake 375 for 25 to 35 minutes or until cheese is nicely melted and yummy. Let sit for 10 minutes and serve with sour cream and a large fork!
