Banana Bread- Dianne Sanders
1 1/2 cup flour
1/4 tsp salt
1 tsp baking powder
1 1/2 sticks of butter or margarine- softened
1 1/2 cups sugar
2 eggs
1/4 cup buttermilk
1 tsp vanilla
1/2 to 1 cup nuts
1 cup overripe bananas (I used 2)
Glaze
1 cup powder sugar
2 to 3 tbsp lemon juice
Oven 350
Grease and flour two small loaf pans.
Combine dry ingredients. Cream butter, sugar until light and fluffy. Add eggs and then dry ingredients. Add buttermilk and beat for 2 to 3 minutes. Stir in vanilla, nuts and mashed bananas.
Bake 350 for 50 minutes or until done. Cool and glaze.
( I always double the recipe and make three large loaf pans)
