Coconut Bread
Makes 2 loaves, or 20 servings, 10 pieces per loaf
3 cups flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 cups sugar
1 cup canola oil
4 eggs, slightly beaten
2 t. coconut extract
1 cup buttermilk
1 cup coconut
Spray two 8 1/2 x 4 1/2 inch loaf pans with non-stick spray and dust with flour. ( I used Baker's Joy). Set aside. Preheat oven to 325 degrees.
Sift flour, baking powder, baking soda, and salt together. Set aside.
Stir sugar, oil, eggs, and coconut extract together in large bowl. Add sifted ingredients, alternately with buttermilk. Stir batter until just combined and wet. Fold in coconut. (I used mixer)
Divide batter between 2 loaf pans. Bake for 60 minutes, test with cake tester (toothpick). Allow loaves to cool for 10 minutes in pans, then turn out onto a wire rack to complete cooling. Wrap in plastic wrap and put into a resealable plastic bag. Bread can be frozen.
Very sweet and yummy. Great for afternoon tea, or breakfast, or a wedding shower snack. New recipe for me, but so delicious it will be one I will use often! Enjoy! SuzyQue
