    Sounds like what I do to our tacos in the winter. Finding tasty fresh tomatoes is hard or expensive in the winter, so I mix in a can of drained crushed tomatoes. I'll add the juice if the spice packet calls for water to mix the spices with. Instead of refried beans I'll mix in a can of rinsed and drained black beans. It stretches the meat for the bottomless-pit that is my teenager, and gets the family fiber and some veggies. In the summer I dice up zukes and yellow squash to mix in. They are much less aware of what is in the mix than you might think, especially if it all tastes like taco seasoning!
    Thanks for the recipe! I was just lamenting over what to fix for supper, and now I have it!

    If you think Rotel might be too spicy, I think DelMonte makes a tomato sauce w/chilis that is good. DH is not fond of real spicy(acid reflux) but i have subbed this for rotel in recipes and he can eat it without problems.

    Rotel is a brand of canned diced tomatoes. The original is pretty spicy so buy the mild ones if you are not fond of heat. I use Rotel in lots of my recipes and have even made a quick salsa in a pinch with it.

    Anybody like bean Rolls???

    1 lb ground meat cooked and drained.
    1 can refried beans
    1 package taco seasoning(hot-mild whatever you like) I use mcCormick brand mild.
    1 can rotel (hot if you like it hot) I drain it as it makes it to soupy if you don't.
    1/2 chopped onion(can cook it with beef or use as garnish)
    2-8oz packages of shredded cheese
    package of the big soft shell tortillas 10" I think? The big ones.
    Mix first 5 ingredience
    spoon into tortillias ( I usually get about 6-8) rolls and fold like a burrito.
    Place in casserole dish side by side and cover with the cheese.
    Bake 350 til hot and cheese is melted.About 15 minutes

    Garnish with onions,lettuce,tomato. and sour cream.

    I hope yall try this . It is quick and easy. My family loves it.
