I made this last night for dinner using leftover pork tenderloin. I added some shredded cabbage for crunchiness. Hubs and DD said it's a keeper. I think it's a good basic recipe that could be tweaked with any protein and combo of veggies/beans/toppings/dressing. Very clean eating and so satisfying!
