1 butternut squash peeled, seeded and grated
1 # Italian sausage
Canola oil for browning sausage
1 onion chopped
1 c farro (or regular rice)
(This whole recipe is made in a big pan on stovetop.)
Remove casing from sausage and cut into bite size pieces with a fork OR use a pkg of loose meat Ital. Brown sausage in oil, remove pieces as done and set aside. Add chopped onion and cook about 5 mins. Drain excess grease. Add in grated squash* (about 4-5 cups or med size squash). Add about 1/4 cup water. Cook about 15 mins stirring occ. Return cooked sausage to pan with squash and onions. Turn heat down to low just to keep warm and make sure squash is cooked. In separate pan cook farro whichtakes 20-30 mins. Serve casserole over farro (or rice).
* I don't have food processor so I grate by hand. You might be able to grate in food proc?
** Directions for farro says to rinse it first and soak overnight. I have made this 5 times and never did the overnight soak and it turned out fine. I think it just might take longer to cook if you don't. Not soaking first takes about 30 mins so start it when the sausage is cooking.
