    Roasted Cherry Tomato Sauce

    I tried this yesterday and it came out very good. You can freeze it too. For anyone who has an over abundance of cherry tomatoes it is a great way to use them. For some reason the pages were switched. Sorry about that! Enjoy!

        We, too, have an overabundance. Because of that I went looking for a recipe to use the little buggers. I have only one plant and it is going crazy. Just as well, I can freeze this tomato sauce for later use. I have two Amish paste tomatoes that are producing quite well also. Looks like I will be canning a bunch of sauce again. Glad you can use the recipe. Hope you like it. I thought it was quick, easy and tasted quite good.

      Definetly trying it. There are only two of us and hubby planted numerous tomato plants. The other day he picked at least 125 cherry tomatoes and there are loads more out there besides all the big boy tomato plants that need to be picked. We have been supplying all the neighbors and our friends with them.

        Did you know that if you don't have time to make the sauce you can then freeze the tomatoes and make the sauce later?

          Yes, I did that last year and so glad I did. However, this year I'm changing it up a little and I will be taking the skin off and coring before I freeze them. Last year I ended up with 28 quarts of tomatoes that I cooked down to 14 quarts. I've used some of it but still have some left. I have two paste plants again this year and am hoping for the same amount. I actually waited until the dead of winter to do the canning. Worked out well.
