I have tried out a few baked oatmeal recipes and they all contain so much liquid that it becomes really mushy. Mise well just make oatmeal on the stove. So I found this one

Even though I was a baker for a good long time I can't figure out why you would need butter and oil?

Could be the combination of the fat content that each contains, maybe not the right balance of one without the other for this particular recipe. Just a guess.

I know people that add butter to their oatmeal. Looking at the recipe, it looks to be very similarlar to a cookie recipe. I would say the oil is to keep it from sticking and the butter adds to the taste.

all the recipes I looked up have similar ingredients. Not sure why you would need all that extra moisture. I make oatmeal overnight in a crockpot using steel cut oats. Usually I make it plain but sometimes add apples, br. sugar etc.
One thing I learned when making my breakfast casserole is that I have better results baking it in loaf pans rather than one large pan. Cooks all the way thru and doesn't stay gooey in the center. I wonder if it would work for this, too?

I don't make oatmeal from scratch. I open a pouch and pour in boiling water!! My sister buys the cut steel or cut something and loves that, but I have never had it.

I am not much of a baker but my guess would be to keep it moist, and from allowing it to stick to the pan.

That sounds about right. My mom ate her oatmeal with butter too. I looked up butter vs oil and I think the butter is for the crispness too.

It's a small recipe so I'll follow it, but take the suggestions to cut down the sugar. I'll let you know how it comes out!

I googled it. It has to do with the smoking point of butter. Adding oil to the mixture helps the butter melt and not burn.

That's for sauteing not baking. I'm a Food Network junky. lol

Could you use applesauce instead of butter?

I wonder how it would taste using Stevia in the Raw or Splenda.
