NQR: Does anyone have an EASY baked macroni & cheese .....

receipe? I have Velvetta cheese and those elbow macroni's and milk and butter. Is that all I need? I think I need to bake the macroni first - then just toss the rest of the stuff with it and bake it all together?
For how long? I am so hungry for this.
Some days I am a pretty good cook, others - well, let's just say the kids think I have lost my marbles. Seems those marbles keep getting bigger somedays. haha!

cook the macaroni first till not quite done. add that to the cheese with a little milk. I don't use the whole big velvetta only half..top this with strips of cheddar cheese or colby. whatever cheese you like. the more the better. bake 20 to 30 min. my kids love this. you can cut it and eat them like a brownie. so so good

I do it the same way Patrice does with the exception of putting buttered bread crumbs on top..oh yeah! Making me hungry and dinner is already in the oven but it's King Ranch Casserole! Hurry up food!
I know that's the "lol" icon, but looks like he's eating!!!

It's in the oven! And added the crumbs on top. I can't wait! Why has it taken me 24 years to make this myself, I'll never know. Did you know I am a procrastinator?

When I was in grade school, Mrs. Little was our school cook. On Friday we would either have salmon croquettes or mac and cheese. She made the best macaroni and cheese I have ever eaten - and I know she used what we used to call 'long-horn' cheese. I'm not sure that it can be found anymore, but it was a type of cheddar. I have never been one to make mac and cheese, but this topic is making me hungry for some. My daughter used to have a friend who made a mac and cheese bake that had four types of cheese in it but I never got the recipe. l am not a Velveta fan so probably wouldn't like a mac and cheese using it . . . too creamy, I think.

                  Sandy,
When I don't have Velveeta, I use cheddar, swiss, smoked gouda, cream cheese and a little milk, still put buttered bread crumbs on top. You can add any kind of cheese and it still tastes great. Use what you like. LOL, not really low calorie but sure is good.

okay--now I have to share my delicious macaroni and cheese recipe! It uses Velveeta and I don't usually care for it, but this is so creamy and good! It tastes like home baked, but you do it in the microwave. If we don't eat it all I can freeze it for a quickie meal for later.

                    Terrific Microwave Mac'N'Cheese

                    2 cups uncooked elbow macaroni
                    2 cups hot water
                    1/3 cup butter
                    1/4 cup chopped onion
                    3/4 t. salt
                    1/4 t. pepper
                    1/4 t. ground mustard
                    1/3 cup flour
                    1 1/4 cups milk
                    8 ounces Velveeta, cubed

In a 2 qt. microwave safe dish, combine the first 7 ingredients. Cover and microwave for 3 1/2 minutes on high. Stir. Cover and cook at 50% power for 4 minutes. Combine flour and milk and stir till smooth. Stir into macaroni mixture. Add cheese. Cover and cook on high for 6-8 minutes.....stirring every 3 minutes. yummy!

That does sound good Suzy. I'll have to try that sometime.

Mine turned out good and got high marks from DS and his friend. I thought it was okay. Thinking it was the velveta - need to try the different cheeses someday. I just think it needs something more - just can't put my finger on it. It will get all eaten up though, that won't be a problem.

                      Hugs,

My DD makes one with gruyere(?) cheese and bacon. She doesn't make it often cause the cheese for it is expensive but it is fantastic. I think it might be Ina Garten's recipe.
