Mini Fruit and Nut Cakes with Orange Glaze
Blend together:
1 tsp salt
4 eggs
2 tsp vanilla
1 cup sugar
1 tsp baking powder
Add 1 cup flour-Blend until there are no lumps
Mix in: 1 pound chopped dates
1 pound chopped walnuts
1 pound maraschino cherries
Pre heat oven to 300- I lowered to 275 because they burn easy. Line miniature muffin cups with paper cups and spray them with pam. Fill almost to top with above mixture. Bake at 300 (or 275) for about 25 to 30 minutes. Do not over bake.
Orange glaze- This is what makes these little jewels scrumptious.
Mix:
1 cup powder sugar
¼ cup orange juice
Microwave at full power until it bubbles. Brush over Fruit Cakes with a pastry brush- the cakes do not have be to completely cool. This gives the cakes a shiny look on top; also good on apple pie. Makes 6 dozen.
Store in airtight container and will keep 1 week on counter, longer if refrigerated. Cakes can be frozen , glaze before serving.
