Caramel- filled Chocolate cookies

2 1/2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1 cup sugar
1 cup brown sugar
1 cup butter soft
2 teaspoons vanilla
2 eggs
1 cup pecans chop fine
48 rolo candies
1 tablespoon sugar

Heat oven to 375.In small bowl combine flour ,cocoa, and baking soda. Mix well. In large bowl beat sugars and butter until light and fluffy. Add vanilla and eggs beat, add flour mixture blend well. Stir in half cup pecans. For each cookie with floured hands shape about a tablespoon of dough around a rolo candy, covering completely.
In small bowl, combine rest of pecans and 1 tablespoon sugar. press one side of ball into sugar mixture. Place nut side up on ungreased cookie sheet, 2" apart. Bake 7-10 min or until set and slightly cracked. Cool two minutes; remove.

I'm going to have to try this. When my kids were young I told them Rolo candy was for adults. lol I don't know how long it was before they found out it wasn't. lol
