View Full Version : Downeast Maine Pumpkin Bread

I get most of my recipes from http://allrecipes.com

This pumpkin bread had the highest rating.
I used 1 Tablespoon of batter in a well greased and floured mini muffin pan. And still had enough batter left over to make 2 full sized loaves. :)

Ingredients

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

Sounds good if you like pumpkin! I will print this off and give it to my Dad who is from Maine. He bakes alot in the winter when he can't tend to his garden.

I guess you would have enough left over to make 2 full sized loaves.

Looks like she was making some bite-sized muffins for the quilting group.

The recipe makes three loaves. BUT I have a mini muffin pan ( like this one....http://www.lakeland.co.uk/12514/My-Kitchen-Cook-and-Bake-Mini-Morsel-Set )

Each held a tablespoon of batter to make bite sized muffins that were perfect size and didn't over flow when rising in the oven.

I love this recipe, made it with a few modifications - applesauce for the oil - 2 cups sugar - egg beaters. It tasted great!

Just wanted to add the Pumpkin Bread is also REALLY nice with a streusel topping put on before baking..:-)
