    CARNIVAL COCONUT PIE

    Beat together:
    4 eggs
    1 1/2 cups sugar
    1/2 cup flour
    1 tsp. vanilla
    1 1/2 cups coconut
    Add: 2 cups and 1/4 cup melted butter.
    Stir all well and pour into greased pie plate (9 inch)
    Bake @ 350 for 45 minutes.
    This pie also makes it's own crust.

    This pie is sweet and is like a custard pie, very good.

    You, my dear friend, are wrecking havoc with my new diet . . . my very, very next to favorite pie - anything with coconut!!!

      I hear you Sandy...I love anything with coconut!!!...even bath products! Thanks for sharing the recipe, Mary. I think I made this one years ago when the "impossible pie" rage was going around. Hugs....
